Self-Repairing, Antibacterial Starch–Chitosan Hydrogels Modified with Polydopamine for Improved Surface Adhesion in Food Packaging

Abstract

In this study, an eco-friendly starch–chitosan-based hydrogel with self-healing and antibacterial properties was developed for food packaging applications. The hydrogel structure based on starch and chitosan was designed to achieve both sustainability and functionality, while self-healing capability enabled structural recovery after external damage. In addition, surface functionalization using polydopamine was employed to enhance adhesion and antibacterial performance. As a result, the developed hydrogel exhibited effective inhibition of bacterial growth and maintained structural stability and functional properties under repeated use and deformation. These findings suggest that the proposed hydrogel has strong potential as a durable and hygienic material for food packaging applications.
