Engineering Probiotic Encapsulation Enabled by Polyphenol–Macromolecule–Metal Networks

Abstract

Probiotics are live microorganisms that confer health benefits to the host by modulating gut microecology, producing functional metabolites, neutralizing dietary carcinogens, inducing cytokine responses, and inhibiting pathogenic colonization. However, the probiotics are highly susceptible to hostile environments such as manufacturing process and the acidic conditions of gastric fluid. To enhance probiotics viability, we report a biocompatible nanoencapsulation method based on supramolecular assemblies of polyphenols, macromolecules, and metal ions, whose physicochemical properties are tunable via macromolecule selection and compositional ratios. The viability of capsulated probiotics was enhanced compared to pristine probiotics against acidic conditions and freeze-drying process. This work provides the rational design of supramolecular materials and highlights the potential of biocompatible assemblies for developing probiotic nanoencapsulation methods.
