This study investigates the influence of interfacial architecture on the osmotically driven water transport and spontaneous emulsification (SE) in W/O/W double emulsions. Using a droplet microfluidic platform, we compared the stabilizing mechanisms of polymeric PVA and monomeric Tween 80 at the O/W interface. While the osmotic pressure gradient provides the thermodynamic driving force for water migration, the transport kinetics are significantly modulated by the interfacial viscoelasticity and steric hindrance provided by the stabilizers.
