Growing concerns about food safety have led to a rising demand for smart packaging solutions. In this study, we developed an antibacterial, hydrophilic absorbent pad from biocompatible materials such as microcrystalline cellulose (MCC), polyvinyl alcohol (PVA), chitosan, and red cabbage anthocyanins for real-time detection of food spoilage. The pad not only inhibits bacterial growth and extends the shelf life of products but also visually indicates freshness through pH-sensitive color changes. PVA and chitosan provide a robust matrix for stability, while MCC enhances moisture absorption, limiting bacterial proliferation. The antibacterial properties are primarily derived from chitosan and anthocyanins. This versatile pad presents an effective approach for minimizing food waste and enhancing safety, particularly in meat and seafood packaging applications.
