UV-blocking and Antioxidant Functional Fish Gelatin Films using <em>Miscanthus</em>-Derived Liquid Hydrolysates as Green Crosslinker

Miscanthus, an underutilized lignocellulosic biomass, is composed of lignin, cellulose, hemicellulose, and extracts, and each lignocellulosic raw material is widely used for sustainable materials. In this study, aqueous fish gelatin-based functional films were prepared by using Miscanthus liquid hydrolysates as green crosslinking and UV-blocking agent. In addition, to proceed with the crosslinking reaction of the gelatin/Miscanthus liquid hydrolysates film, a Maillard reaction was carried out. Xylose, glucose, and arabinose present in the liquid hydrolysate were cross-linked with gelatin by Maillard reaction, which improved the mechanical properties of the gelatin film and controlled hygroscopicity. As a result, the acid-soluble lignin (ASL) present in the liquid hydrolyzate and the Maillard reaction product were able to maximize the UV blocking and antioxidant effects of the gelatin film.
