Stabilization of water-in-water emulsions using microspheres and their applicability

In various fields (drug delivery, food, artificial cells, etc.), water-in-water(W/W) emulsions where all ingredients can be dispersed in water have recently become promising due to their eco-/bio-friendly characteristics. However, due to a very low interfacial tension of the water-water interface (1~100 μ?/?), it is very difficult to stabilize the interface, and thus, securing high stability is a key issue in greatly expanding the availability of water-in-water emulsions. In this study, to maximize the stability of the emulsion, the effect of the type of microspheres on the stability of water-in-water emulsions was thoroughly investigated, and it was successfully confirmed that the size of droplets can be controlled by varying various conditions (a particle concentration, an emulsification speed, etc.). Furthermore, by the addition of monomer, photo-initiator, and crosslinker to the stable W/W emulsions, porous polymeric materials was successfully achieved.
