Improving the stability of various interfaces through the colloidal particle layer formed at the interface by depletion attraction

Systems with large interfacial areas have attracted much attention in a variety of fields, such as foods, cosmetics, and biomedical engineering etc. To successfully utilize these systems, the great stability of the interface is highly required, and colloidal particles have been popularly used as a stabilizer because the particles can be adsorbed to the interface irreversibly. Nevertheless, a poor stability of some interfaces (e.g., water-water interface) have been still reported, and the relevant understandings of particle behavior at the interfaces are still lacking. In this research, we have thoroughly investigated the particle behaviors at the interfaces to maximize the stability of interface, and in particular, the detailed studies on the formation of controllable multilayers at the air-water interface and the formation of stable particle layers at the water-water interface have been conducted in the presence of depletion attraction.
