Molecular interaction of chitosan against hydrophobic and hydrophilic surfaces

Chitosan is the second most abundant natural material after cellulose. The physical properties of chitosan can be adjusted based on external conditions such as pH, temperature, and molecular weight. To fully utilize the potential of chitosan, it is crucial to understand its interaction mechanisms with substrates. To investigate the hydrophilic/hydrophobic properties and identify interaction mechanisms of chitosan, surface forces apparatus was conducted with four different types of functionalized self-assembled monolayer surfaces (COOH, NH2, CH­3, Phenyl). As the pH increases from 3.0 to 6.5, chitosan becomes half-protonated, leading to the formation of hydrogen bonding with hydrophilic surfaces. Additionally, due to low charge density, strong hydrophobic interactions were measured with methyl SAM surface. Understanding these molecular interactions provides valuable insights for the design of chitosan-based hybrid composites with other biomolecules or synthetic materials.
