Abstract
Water freezing is a commonly observed natural phenomenon; however, ice growth and recrystallization can critically damage living organisms. Nature has evolved to produce antifreeze proteins to survive this freezing threat. Their specific amino acid sequences have been widely accepted to play a critical role in binding to ice, which can result in antifreeze activity at the ice-water interface. We have elaborated to develop active assemblies mimicking the distinct design concept of natural ice-binding proteins. In this presentation, we will address our continuing efforts for creating enthalpic assemblies that play uniquely at the ice-water interfaces and their dynamics, in comparison to traditional colligative agents. Our findings can be extended to resolve subzero industrial issues and bioproducts preservation.
