Microbead-based Colorimetric and Portable Sensor for Polyphenol Detection

To determine the beneficial qualities of the healthy foods, precise quantification of total amount of polyphenols is important. In particular, to determine the quality of antioxidant drinks and beverage, consumers demand on-site detection. Herein we developed portable alginate-Fe3+ beads for the field detection available. The yellowish beads contain ferric ion to react polyphenol which becomes blackish metal-phenolic complexes by incubating with polyphenol. It is simple to procced the detection procedure; dipping the beads in analytical sample and out – taking a photo – converting to RGB color values and quantification of existed polyphenol. The overall process would be completed within 5 min. Compared with the Folin–Ciocalteu assay which is a representative optical sensor kit for total phenolic content, the bead-based sensor showed better limit of detection of 0.0415 mM for tannic acid and comparable sensing capability for polyphenol containing plant extract and brewed tea.
