Colorimetric Chemosensor for Sensitive Detection of Food Decomposition

In this presentation, we report a highly sensitive colorimetric chemosensor molecule (Dye1) for the detection of ammonia. Discernable color change of Dye1 in response to ammonia (ΔEab=98.7) gas with the low level of limit of detection (500 ppb) enabled naked-eye-based and sensitive recognition of decomposition of various foods such as milk, pork, and fish. Moreover, fast detection speed (~1s), high selectivity, and printable property on cellulose substrates suggested the practical applicability of Dye1 as quality indicator for intelligent food packaging technology.
