Clathrate-water control for ice recrystallization inhibition with polymeric nanosheets

Ice-binding proteins (IBPs) in natural, which endow organisms with freezing resistance, have been of huge interest. To overcome disadvantages of conventional cryoprotectants, mimetic cryoprotectants that mimic IBPs have been developed by adopting ice-binding moieties (IBMs). Their ice recrystallization inhibition (IRI) has mainly been reported at atomic-scale between IBMs and binding planes of ice. At a macroscale, however, IBMs are aligned on the flat surface of the IBPs. Thus, we imitated the structural binding of IBPs via self-assembly. We designed amphiphilic peptides which assembled a two-dimensional nanosheet. The IBMs were coupled to one end of the peptide sequence, and the alkyl chains on the other side protect ice against water molecule. This Janus nanosheet served like a patch, forming a depletion region of water molecule. They exhibited enhanced IRI ability owing to the large surface area.
